Orange Creamsicle

3 oz Orange Flavor Gelatin
3.4 oz Vanilla Instant Pudding
1 c Boiling Water
1/2 c Cold Water
8 oz Whipped Topping, thawed
28 oz Mandarin Oranges, drained (reserve 8-10 for garnish)
2 c Mini Marshmallows
1/4 c Mini Marshmallows (for garnish)
Using a medium-size heat-safe bowl, stir together orange flavor gelatin and boiling water. Stir until gelatin is completely dissolved. Stir in cold water. Place in fridge for 15 minutes. Remove cooled gelatin from fridge and whisk in instant vanilla pudding until completely incorporated. Cover the bowl and return to fridge for 20 minutes. Remove bowl from fridge. Fold in whipped topping, drained mandarin oranges, and mini marshmallows. Return to fridge and chill for 2 hours or overnight. Before serving, garnish with more marshmallows and mandarin oranges.
